Sesame Garlic Bok Choy

This beautiful bok choy dish is delicious, easy to prepare, and makes a perfect side for any meal. Try it for yourself!

Ingredients
Recipe serves 4-6
1 large package of bok choy, halved and cleaned (Soak the bok choy in cold water with 1/2 tsp salt and 1 tsp white vinegar for about 5 minutes to remove any dirt or bugs, then rinse thoroughly).
1 tsp olive oil
1/4 cup sesame seeds
1/2 cup sliced almonds
Ingredients for the sauce
2 tbsp Tamari Sauce
1 tbsp coconut sugar
1 tbsp minced garlic
1 tbsp sesame oil
1 tsp corn starch
1/4 cup water
Preparation
Heat a medium pot of water over medium heat, using just enough to cover the bok choy. Bring it to a simmer.
Once the water is simmering, add the olive oil and cleaned bok choy. Blanch for 3 minutes, then immediately transfer the bok choy to an ice bath (a bowl of ice and cold water) to stop the cooking process and preserve its color and nutrients.
Drain the bok choy thoroughly in a colander, then transfer to a serving dish.
In a small saucepan over medium-low heat, combine the sauce ingredients and whisk until the cornstarch and sugar have dissolved. Cook for 3–5 minutes, or until the sauce thickens but remains pourable. (If it becomes too thick, add a bit more water.)
Pour the sauce over the bok choy and sprinkle with sesame seeds and almonds before serving.
