Coconut Banana Chocolate Squares

Calling all coconut lovers! With just a handful of ingredients, you can whip up this easy, delicious treat. Give it a try and satisfy your sweet tooth.

Ingredients Recipe makes 20 bars


  • 2 small ripe bananas, mashed

  • 2 cups plus 2 tablespoons sweetened shredded coconut, divided

  • 1/4 teaspoon ground cinnamon

  • Pinch of salt

  • 1/2 teaspoon vanilla extract

  • 1 tablespoon unsweetened cocoa powder

  • 1 cup bittersweet chocolate chips

Preparation


Preheat the oven to 350ºF. Line a 10x13-inch sheet pan with parchment paper, lightly spray with coconut oil, and set aside.

In a large bowl, combine the mashed bananas, 2 cups of shredded coconut, 1/4 teaspoon cinnamon, a pinch of salt, vanilla extract, and cocoa powder. Mix thoroughly until evenly combined, then transfer the mixture to the prepared sheet pan.

Using a greased spatula or slightly wet hands, spread the coconut mixture evenly in the pan, smoothing the top as much as possible.

Bake for 25–27 minutes, or until set and the edges are golden and slightly crunchy.

Remove the pan from the oven and immediately sprinkle the chocolate chips evenly over the coconut layer. Allow the chocolate to melt, then use an oiled spatula to spread it into a thin, even layer.

Note: If the chocolate cools and becomes difficult to spread, return the pan to the oven for 30–45 seconds to gently re-melt the chocolate, then continue spreading with a spatula.

Sprinkle the remaining 2 tablespoons of coconut evenly over the chocolate. Refrigerate for at least an hour to set. Once the coconut and chocolate have hardened, cut into bars using an oiled serrated knife.

Store the bars in an airtight container in the freezer to keep them crunchy.
