Fluffy Cottage Cheese Waffles

These gluten-free waffles are light and fluffy. They’re perfect for a healthy snack or quick breakfast — give them a try!

Ingredients
Recipe makes 10 waffles
Dry ingredients
1 cup buckwheat flour
1/2 cup almond flour
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
2 tbsp coconut sugar
Wet ingredients
1 cup organic, grass-fed cottage cheese (I use MC Dairy brand)
2 eggs, beaten
1 cup unsweetened almond milk
1 tbsp vanilla extract
avocado oil spray (any oil spray you choose)
toppings- strawberries, washed and sliced (or any fresh fruit of your choice), my homemade granola, maple syrup
Preparation
In a medium bowl, add all the dry ingredients and mix to combine.
Combine the wet ingredients with the dry ingredients (excluding the oil spray), mix until incorporated, avoid over mixing, and let the batter rest for 5 minutes before continuing.
Heat your waffle iron to high, making sure it is fully preheated.
Once the waffle iron is ready, spray the grills with avocado spray. Scoop 1 1/2 servings of batter into each compartment using an ice cream scoop and cook for 3 1/2 minutes, or until golden and fluffy. Remove the waffles and repeat with the remaining batter.
