Cauliflower Steaks

This simple cauliflower recipe is delicious, quick to make, and full of flavor. A perfect healthy side or light main dish.

Ingredients
Recipe serves 4
1head of cauliflower, washed and stems removed
2 tbsp water
1/4 cup olive oil, divided
1 tsp salt, divided
1/2 tsp each of black pepper, garlic powder, paprika, and Italian seasoning, divided
2 tbsp grated parmesan, divided
1 tbsp hemp hearts
Preparation
Preheat oven to 425ºF.
Line a large baking sheet with parchment paper and set aside.
To prepare the cauliflower, rinse well and remove the outer leaves. Slice the cauliflower into 1-inch steaks, aiming to keep the slices intact. The end slices of the cauliflower may break apart and can be roasted as florets alongside the steaks.
Gently transfer the slices onto the baking sheet.
Brush the cauliflower with half the oil, then season with 1/2 tsp salt, 1/4 tsp each black pepper, garlic powder, paprika, Italian seasoning, and 1 tbsp parmesan.
Gently flip the cauliflower over and repeat the seasoning process on the other side.
Pour the water into the pan between the steaks.
Bake for 15 minutes, then increase the heat to 450ºF and continue cooking for an additional 10 minutes, or until the cauliflower stems are fork-tender.
Sprinkle with hemp hearts and extra parmesan before serving.
