Roasted Lemon-Garlic Potato Wedges

This quick and simple oven-roasted potato recipe makes the perfect side dish. Give it a try!


Ingredients

Recipe serves 6-8


  • 4-5 large potatoes, peeled and cut into wedges (1 large potato serves 2 people)

  • 1/4 cup avocado oil

  • 1 lemon, zested

  • 1 1/2 lemons, juiced

  • 4 garlic cloves, minced

  • 1/2 tsp each dried thyme, mint, oregano, parsley, basil

  • 1 tsp salt

  • 1/4 tsp each black pepper, garlic powder, paprika, and harissa seasoning

  • 1/4 cup fresh parsley, chopped

  • 2 tbsp olive oil

Preparation


Preheat oven to 450ºF.


Add potatoes and remaining ingredients (except parsley and olive oil) to a large baking dish.


Toss the potatoes to mix the ingredients well (I like to get in there with my hands to really combine everything).


Cover the potatoes tightly with parchment and foil, and bake for 25 minutes.


Remove the potatoes from the oven. Use a spatula to flip and gently mix them. Remove any parchment paper or foil covering the dish. Return the potatoes to the oven and cook uncovered for 25-30 more minutes, or until golden and crisp.


When potatoes are fork-tender and golden, finish with olive oil and fresh parsley. Serve warm.
