Healthy Banana Seed Muffins

If you have ripe bananas lying around, you can make banana muffins :) These delicious muffins are gluten, dairy, and nut-free. A perfect healthy snack!

Ingredients

Wet Ingredients:

  • 4 ripe bananas, mashed

  • 1 whole banana, save for later

  • 1/2 cup sunflower butter

  • 1/3 cup unsweetened coconut milk

  • 2 tbsp coconut oil

  • 1/4 cup maple syrup

  • 1 egg

  • 1 tsp vanilla extract


Dry Ingredients:

  • 1 cup millet flour

  • 1/2 cup coconut flour

  • 1/3 cup sunflower seeds

  • 1/4 cup flax meal (or ground flax seeds )

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • pinch of salt

  • cinnamon

Preparation


Preheat oven to 350ºF.


Grease a muffin pan with coconut oil and set aside.


In a medium bowl, whisk together all wet ingredients until smooth.


With a spatula, fold all the dry ingredients into the wet ingredients until combined, then let sit for 10 minutes.


Slice the remaining banana into thin slices to place on the muffins.


Using a large ice cream scooper (I like to grease the scooper with oil for easier transfer).


Fill the prepared muffin pan with 1 full scoop of batter and top with a banana slice and a sprinkle of cinnamon.


Bake for about 22-25 minutes.
