Chicken Burgers

These chicken burgers are healthy, tasty, and versatile. You can have them in a bun or lettuce wrap, or enjoy them in a mixed salad with any toppings you like. Give them a try!

Ingredients
Makes 10 large patties
2 lbs organic minced chicken
1 shallot, halved
4 cloves of garlic, peeled
1/2 red bell pepper, washed and halved
4 sun-dried tomatoes
1 tsp sriracha
2 tsp Worcestershire sauce
1/2 cup fresh parsley and basil, combined
2 tbsp olive oil, plus extra
1/4 cup hemp hearts
1/4 cup nutritional yeast
1 tbsp dried onion flakes
1/2 tsp celery seeds
1 large organic egg
1/4 cup spelt flour
1/2 cup gluten-free flour bread crumbs
2 tsp salt
1/4 tsp each black pepper, paprika
lettuce (to make lettuce bun)
toppings: onion, pickles, tomatoes, micro mix greens, veganaise (vegan mayo), sriracha sauce (or any additional topping you desire
Preparation
Preheat oven to 375ºF.
Line a large baking sheet with parchment paper. Brush the paper all over with olive oil. Set aside.
Add the minced chicken, hemp hearts, nutritional yeast, onion flakes, celery seeds, egg, spelt flour, bread crumbs, salt, pepper, and paprika in a medium bowl. Set aside.
Add the shallot, garlic, pepper, sun-dried tomatoes, sriracha, Worcestershire, parsley/basil, and 2 tbsp olive oil in a small food chopper or food processor. Blend all ingredients until combined and coarsely chopped, leaving some texture (you do not want a paste consistency).
To form the patties, I like to have a small bowl of water nearby to wet my hands. I take about 1/4 cup of mixture and roll it into a ball, then shape it into a uniform patty, 4-5 inches in diameter. Place the patty on parchment paper and continue the process with the remaining mixture. You should get about 10 burgers.
Once you have made all the burgers, brush the top of the patties with olive oil.
Bake patties for 24 minutes, flipping halfway through.
I like to prepare my burger on a lettuce bun with onions, pickles, tomatoes, micro-mix greens, veganaise (vegan mayo), and sriracha sauce.
